    Aim: The present study deals with the incorporation of chicken egg shell powder in formulation of biscuits. Materials and Methods: This study relates the effects of adding 0% (control), 0.6% (treatment 1), 0.8% (treatment 2), 1.0% (treatment 3), 1.2% (treatment 4), and 1.4% (treatment 5) of chicken eggshell powder on the qualities of the biscuit and their relation to the calcium content. All the ingredients were kept constant except water and baking time which increased and decreased, respectively, with the increase in the level of chicken eggshell powder. Results: Results of the sensory (appearance, color, flavor, texture, taste, and overall acceptability) evaluation revealed that the treatment 4 has rated higher for texture, taste, and overall acceptability than the other treatment. However, the scores were in the range of acceptability and T-4 showed better acceptability among chicken eggshell powder incorporated treatments. The nutritional value of the biscuits (as determined through nutrient analysis - moisture, protein, fat, and calcium) with the highest acceptable level of eggshell powder 1.2% (treatment 4) contained 0.71% calcium content.
