    Aim: Gymnogongrus sp. is an edible, endemic marine red algae (Rhodophyta) from Maluku, Indonesia, usually consumed as a side dish which has the potential as antibacterial agent. The purpose of this research was to identify the antibacterial activity in Gymnogongrus sp. extract. Materials and Methods: Antibacterial assay was conducted against Pseudomonas aeruginosa, Escherichia coli, and Staphylococcus aureus which commonly cause food spoilage and foodborne disease. Gymnogongrus sp. were extracted and obtained these following substances: Hexane 1, hexane 2, ethyl acetate 1, ethyl acetate 2, methanol 1, and methanol 2. The extracts were assayed using a bioassay diffusion method using a bilayer system. The assays were conducted based on completely randomized factorial design triplicate, continued by honestly significant difference test. All Gymnogongrus sp. extracts can inhibit the bacterial growth in all assays. The results showed that the methanol 1 extract produced the largest rendemen percentage. The three extracts with the highest antibacterial activity were hexane 1, hexane 2, and methanol 1, respectively. This showed that the most active compounds from Gymnogongrus sp. were non-polar. Of the three species of bacteria tested, the most sensitive were the Gram-positive bacteria, especially E. coli, P. aeruginosa, and then S. aureus. Conclusion: Gymnogongrus sp. extracts have the potential to be used as natural food preservatives because they can inhibit the growth of E. coli, S. aureus, and P. aeruginosa.
