    Aim: Gluten is a protein naturally found in some grains such as wheat, Barley, Rye, and Spelt. It acts like a binder that holds food together and gives a stretchy consistency. Gluten proteins are divided into two: The soluble gliadins and the insoluble glutenins. Gluten is formed when both these molecules form cross-links through disulfide bonds to form a mesh kind of network which gives viscosity . The aim of the study was to establish the level of knowledge that college students have on gluten and its effects on their diet. Materials and Methods: This study was conducted with a batch of 100 college students. A survey assessing the awareness and knowledge they had on gluten was taken. The questionnaire focused on questions such as nature of diet, occurrence of allergies, symptoms experienced after consumption, and precautions taken against them. The collected data were analyzed and presented in statistics and the results obtained were discussed. Results: We found that almost 60% of them believed that gluten was bad for their health; however, only 58% were aware that wheat was the major source of gluten and not rice. 33% of the students claimed to have food allergies, out of which 21% were found to have been caused by wheat products. It was also found that 26% of them tried taking medicines to suppress their allergies, but only 17% reported that the medicines actually helped reduce the intensity of the reactions. Finally, about 80% of them said that gluten sensitivity was not common in their region. Conclusion: Only 60% of the college students had proper knowledge on gluten in diet, its effects, and gluten sensitivity. Hence, we can conclude that more awareness has to be created among the population about the kind of diet they take and how it affects them, especially gluten which seems to be the most prominent component of everyone’s diet today.
