    Background: Vitamin C is the main content of strawberry (Fragaria x ananassa). Strawberry fruits are damage easily after harvested, so it needs food processing for fruit preservation. Aims: The purpose of this study was to determine the effect of differences of harvest time and food processing of strawberry fruits on Vitamin C content. Fruits are collected from Ciwidey, West Java, Indonesia, in March and May. Fruits with higher Vitamin C content were processed into sweets, jam, syrup, and dodol. Ciwidey is a strawberry producing center in West Java, Indonesia. Methods: Analysis of Vitamin C was conducted with colorimetric method using iodine for qualitative analysis and methylene blue for qualitative analysis. All samples were reduced iodine color. Results: Vitamin C content was 0.703 ± 0.005 mg/g in fruit harvested in March, 1.301 ± 0.005 mg/g in fruit harvested in May, 0.372 ± 0.004 mg/g in sweets, 0.578 ± 0.006 mg/g in jam, 0.557 ± 0.008 mg/g in syrup, and 0.021 ± 0.007 mg/g in dodol. Conclusion: Harvest time affects Vitamin C content in fruits, and food processing affects Vitamin C content in processed products.
